• You can also melt the chocolate in the microwave. Place morsels and oil in microwave-safe container. Microwave on 50% power for 30 seconds; stir. Microwave for an additional 30 to 45 seconds or until just melted. Do not overcook. • To prevent the balls from sticking to your hands when you roll them, lightly coat your hands with nonstick cooking spray.

I am always looking for healthy snack options! My afternoon snack also needs to have a bit of sweetness so that I don't reach for crap food when those 3 p.m. cravings kick in. I completed a month-long Barre3 challenge over the weekend and along with the workouts, I received tons of healthy and tasty recipes, including this raw carrot-cake energy bites. They are delicious. Click here for the recipe. I love cod! It is so basic, but you can jazz it up anyway you'd like. I find that it's kind of like tofu - it will take on the flavor of whatever seasonings you use. I decided to try something new after searching for new cod recipes. I paired this with my summer go-to salad - black beans, corn and whatever else I have in the fridge. Black Bean Salad
Mix all ingredients in a bowl and enjoy. This makes a good salsa as well for people who don't like tomatoes. Optional: add 1/4 cup of cilantro and tomatoes. My husband doesn't love tomatoes, so I kept them out. Chili Lime Cod
Pat the cod fillets dry. Sprinkle both sides of the fish with chili powder, cumin, salt and pepper. Heat olive oil in a skillet and cook the cod about 2-3 minutes on each side. Plate the fish and squeeze fresh lime juice over the top. Pair with black bean salad. I woke up Saturday morning to several tomatoes and jalapeños (both donated by friends...thank you!) on my counter. I decided it was time to use these ingredients before they go bad. Salsa seems to be the quickest way to get use up tomatoes in the summer. If you have an abundance of vegetables from your garden, and you think they'll go bad, call up your local homeless shelter or food pantry and find out how you can donate your fresh veggies to people who really need the food! Please don't let it go bad; there are so many hungry people in our communities. Tomato Salsa I processed this salsa a little too much and it's a bit watery, but it tastes good!
Pineapple Salsa
Add all ingredients into a bowl and serve. This salsa would be excellent on grilled or pan-seared fish, chicken or even topped on a green salad for a fun kick! |
