I'm so sorry that I have been MIA! My mother-in-law stayed with us for three weeks in April, so I stuck to simple meals, and I was traveling from May 3-17! I'm back and glad to be home and cooking again! I am posting this on Thursday, so there are comments about meals from earlier in the week. And as a reminder, we eat salad 6-7 times per week with our dinner...don't forget your veggies!
Sunday, March 19: Sara is coming over for lunch; kids will have mac & cheese and I'm making Mexican Lasagna for the adults. Leftovers will be lunch. Dinner is Chili and TJ's cornbread.
Monday, March 20: Slow Cooker Honey Lime Ginger Pork, roasted veggies and sweet potato Tuesday, March 21: Hello Fresh Meal: Sweet 'N' Spicy Apricot Chicken with Lemony Couscous and Green Beans, salad Wednesday, March 22: Hello Fresh Meal: Sliced Steak Tagliata with Sweet Potato Wedges and Warm Tomatoes in Vinaigrette, salad Thursday, March 23: Taco Night, Salad, Black Beans and Corn Friday, March 24: Lemon Parmesan Chicken, salad, veggie, sweet potato Saturday, March 25: Hello Fresh Meal: Thai-Spiced Pork and Rice Noodle Stir-Fry with Mini Bell Peppers and Red Cabbage, salad Did the kid's like my banana cookies? No! Shocker. Oh well... I think they're pretty darn good for experimenting! You make them and let me know what you think!
Preheat oven to 350. By hand, mix up egg in a bowl and add mashed banana and mix together. Mix in the remaining ingredients. Drop on greased sheet pan and bake for 12-15 minutes depending on the size of your banana cookie. Let them sit on the baking sheet for a few minutes; when I tried to remove them right away, they still wanted to fall apart. They were more firm after about five minutes on the pan. NOTE: These are not crispy because there is no flour! Day 3 - Wednesday I woke up tired since I didn't get to sleep until about 11 p.m. due to stomach issues, so today needs to be better! My plan is to skip the fiber sweep altogether because I think that is a big part of the problem. I'm also only going to have one Vanilla Fresh at lunch today ...just in case this is causing an issue as well.
If you want to lose some weight quickly, 3 Day Refresh is for you! I am shocked at the scale vs. hunger. I really wasn't starving at any point during this for a few pounds lost. The first day was a challenge because I went from eating full meals the day before to only veggies and a little bit of fruit. Day 4 - I put on a pair of jeans this morning that I almost couldn't button last week and they fit perfectly today! Besides that, the 3 Day Refresh was an amazing mental game. I couldn't snack on all the food 20 steps from my office, I had to be hungry at times and I was forced to be vegan for two days (I cheated the third day to get some protein from meat since I was skipping the dinner Vanilla Fresh). You have to mentally prepare and stay mentally strong during this type of program. I also realized I don't need caffeine like I thought I did - no headaches on day two or three. I may switch to decaf tea every other day now (mainly because I can't find my favorite tea in decaf form :)). Doing the 3 Day Refresh will change the way that I eat, in that I won't run to the kitchen every time I feel hunger pangs; I'll ride it out for a bit. I didn't crave anything but a cheeseburger and salty foods...so I salted my salads and veggies to kick that craving. I expected to be jonesing for sugar, but I didn't. Vanilla Fresh is sweet, so I think that helped. I worked out this morning - thank goodness - never in my life would I think that I would miss working out. I REALLY missed it that last few days, especially seeing my challenge group all posting their workouts. I won't do the refresh again due to my tummy issues, BUT if I didn't have the tummy issues, I would absolutely do it again. Please don't let my stomach issues stop you from doing this; I'm apparently a rarity! Most people don't have the issues that I had.
